Baketec-L is supplied in poly-lined 25Kg cardboard boxes
When stored at temperature below 20 °C and in a dry place, Baketec-L shows no significant loss in activity over a period of two years
Baketec-L confirms to all relevant International standards including FAO, WHO, JECFA and FCC specifications
Inhalation of dust from powder enzymes should be avoided. Open in a well-ventilated environment. In case of contact with skin/eyes, promptly rinse with water for at least 15 minutes. Clean any spillages with low-pressure water hoses, avoiding the formation of aerosols. For more detailed information please refer to the Material Safety Data Sheet for this product.
The benefits of Baketec-L are similar to those of emulsifiers: - Improvement in dough handling & proofing stability (dough tolerance) - Cost-effective substitution of chemical emulsifiers - Easier handling during production, and improved stability during transportation and storage - Clean labelling when 100% emulsifiers are replaced (no declaration of E numbers)
The amount of emulsifiers that can be replaced with Baketec-L depends upon the type of bread, the process applied and the emulsifiers used; for short process, 50% emulsifier substitution is recommended, whereas 100% substitution is possible for long production processes. We would consider that 0.2% Datem can be replaced with 0.2g – 1.0g of Baketec-L per 100Kg of flour (depending on process applied). More generally we would recommend a dose of 0.1g to 3.0g per 100Kg flour. In formulations containing dairy or other fats with short chain fatty acids, Baketec-L may produce undesirable off-flavours. Baketec-L is completely deactivated during baking.
